𝐁𝐥𝐚𝐜𝐤 𝐌𝐨𝐨𝐧 Farm is a boutique, experimental coffee farm located in Panama, known for its focus on 𝐫𝐚𝐫𝐞 𝐯𝐚𝐫𝐢𝐞𝐭𝐢𝐞𝐬, 𝐩𝐫𝐞𝐜𝐢𝐬𝐢𝐨𝐧 𝐟𝐞𝐫𝐦𝐞𝐧𝐭𝐚𝐭𝐢𝐨𝐧, 𝐚𝐧𝐝 𝐟𝐥𝐚𝐯𝐨𝐫-𝐝𝐫𝐢𝐯𝐞𝐧 𝐩𝐫𝐨𝐜𝐞𝐬𝐬𝐢𝐧𝐠 rather than volume production. CHIROSO (PROCESSING DETAILS)

The 𝐂𝐡𝐢𝐫𝐨𝐬𝐨 𝐍𝐚𝐭𝐮𝐫𝐚𝐥 is processed using 𝐜𝐚𝐫𝐞𝐟𝐮𝐥𝐥𝐲 𝐜𝐨𝐧𝐭𝐫𝐨𝐥𝐥𝐞𝐝 𝐰𝐡𝐨𝐥𝐞-𝐜𝐡𝐞𝐫𝐫𝐲 𝐟𝐞𝐫𝐦𝐞𝐧𝐭𝐚𝐭𝐢𝐨𝐧. Only fully ripe cherries are selected and fermented with 𝐥𝐢𝐦𝐢𝐭𝐞𝐝 𝐨𝐱𝐲𝐠𝐞𝐧 𝐞𝐱𝐩𝐨𝐬𝐮𝐫𝐞 to enhance sweetness and aromatic complexity without excessive funk. The coffee is then 𝐬𝐥𝐨𝐰-𝐝𝐫𝐢𝐞𝐝 𝐨𝐧 𝐫𝐚𝐢𝐬𝐞𝐝 𝐛𝐞𝐝𝐬 under controlled conditions to preserve clarity and stability.

This natural fermentation highlights 𝐟𝐥𝐨𝐫𝐚𝐥 𝐚𝐫𝐨𝐦𝐚𝐭𝐢𝐜𝐬, 𝐫𝐢𝐩𝐞 𝐬𝐭𝐨𝐧𝐞 𝐟𝐫𝐮𝐢𝐭 𝐬𝐰𝐞𝐞𝐭𝐧𝐞𝐬𝐬, 𝐚𝐧𝐝 𝐚 𝐜𝐥𝐞𝐚𝐧, 𝐞𝐥𝐞𝐠𝐚𝐧𝐭 𝐟𝐢𝐧𝐢𝐬𝐡, while maintaining the delicate character of the Chiroso variety.
